Here is the recipe if you are interested
COPYCAT JENNY BUTTER COOKIES
A) 100g salted butter, cold but softened
25g icing sugar
B) sifted together dry ingredients:
25g rice flour
30g bread flour
45g plain flour
1) cream butter & icing sugar until pale
2) fold in dry ingredients until just combined
3) put mixture into a piping bag & leave in fridge for 5 minutes
4) pipe out on lined baking sheet
5) bake in preheated oven 160'C for 15 min until brown at edges, rotating half way

C) 1 Tbsp instant coffee granules dissolved in 1/2 tsp boiling water
C) 1 Tbsp instant coffee granules dissolved in 1/2 tsp boiling water
1) cream butter & icing sugar until pale
2) fold in dry ingredients until just combined
3) put mixture into a piping bag
4) pipe out on lined baking sheet
5) bake in preheated oven 160'C for 15 min, rotating half way
Note:
1) For Coffee Variant, I have replaced the rice flour with corn flour.
2) rice flour and corn flour are interchangeable & it does not affect the texture

Hi Katie, the recipe I used uses corn flour instead of rice flour
but result should be similar,
I find there's still something lacking in taste,
quite a few recipe I read calls for golden churn tin butter,
that probably makes the difference,
if you are able to get hold of the butter
maybe you can have a try to see if there's any difference
from normal butter. Normal butter still taste great though ����

Katie Foong: Yes I am very particular about butter.
I have tried golden churn tin
but I still prefer SCS in WHITE paper wrapper.

I think I will try using corn flour one if these days.
Think of replacing some of the flours with cocoa powder too.

Buttery ���� try using corn flour next time,
I seem to get a better after taste,
I did a batch of rice flour plus corn flour but I prefer corn flour.

Kai Ching Leong: yeah, can try swapping corn flour for rice flour,
the recipe i used, uses wheat flour instead of bread,
but they are pretty much same stuff,
so probably corn flour will make a difference,
try to use corn flour and see whether you like it or not :)

I will try today & show you the picture of the product.
Think I will use corn flour instead of rice flour,
plain flour instead of bread flour.
I am going to replace some of the flours with cocoa powder as well,
so I get a chocolate Jenny Cookies with nut too?

you do meant wheat flour instead of plain flour yes?
The plain flour remains,
but wheat instead of bread if you are trying a different recipe.
i'm not too sure but i don't think jenny cookies does chocolate ones,
