Aglio olio Scallops

Scallop Aglio olio
a simple but satisfying meal

Scallop Aglio olio
meal for 1 person

4 scallops, defrost, wipe dry & sprinkle with salt & pepper
1 small piece of butter
some olive oil

60g angel hair
2 Tbsp chopped garlic
1-2 Tbsp olive oil
some herbs, optional
salt & pepper to taste

Method:
1. bring 1/2 pot of water to the boil
2. add some salt & oil
3. put in the angel hair to cook until softened, drained
4. heat up a non stick pan, add butter and olive oil
5. place the scallop, one by one into the melting butter, pressing in with your finger
6. leave it to sear for 1 min or 2, turn over and sear the other side
7. when done, remove from pan
8. to the same pan, fry the garlic with the olive oil until slightly brown
9. add the soften angel hair, stir fry, and add herbs, salt & pepper to taste
10. dish up when done, serve with pan seared scallop

MUSHROOM SOUP


Creamy Mushroom Soup
minus the cream!

Mushroom Soup
(A) 25g Chinese dried mushroom
      1/2 big onion, cubed
      300 ml chicken stock + mushroom soaking water

(B) 2 tsp plain flour
      1 Tbsp milk powder
      1 tsp butter
      1/4 tsp garlic oil
      1/8 tsp oregano
      salt (1/2 tsp) & pepper to taste

Notes:
1. can replace part of the liquid with cream if you like
2. add more liquid if you find it too thick

Method:
1. wash mushroom & soak for at least 2 hours
2. remove the centre core & cut into pieces
3. bring to a boil, mushroom, onions & some soaking water
4. allow to simmer until soft
5. alternatively you can double boil to soften
6. scoop only the mushroom & onions into the blender
7. measure the water + top up with chicken stock to 300ml
8. blend mushroom with some of the 300ml liquid
9. empty all into a saucepan, stir in ingredients (B), mix well
10. cook over medium heat until thicken
11. serve hot with sourdough bread or toast

QUICK AND EASY NO KNEAD PIZZA CRUST


Quick & Easy No Knead Pizza Crust
comes handy 
when we need a crust within the shortest possible time.

This recipe produces a 12" hand pulled pizza crust.

No knead, 
you have not heard me wrongly!


Quick And Easy No Knead Pizza Crust
170g lukewarm water
7g sugar
5g instant yeast
270g bread flour (I used 1/2 BF and 1/2 AP flour)
5g salt
20g olive oil

1. add sugar and yeast to warm water, leave aside for 10min until frothy
2. In another bowl, mix together salt  and flour
3. pour oil into the yeast mixture and mix well
4. add yeast mixture to flour mix, mix until everything comes together in a ball
5. cover, and leave aside for at least 10min to proof


6. place dough in between 2 sheets of baking paper and roll flat until 12" wide
7. place the dough sheet onto a 12" oiled pizza pan
8. pull the sides to the edges. If it shrinks, rest awhile & pull again.
9. spread a layer of pasta sauce onto the spread dough


10. add shredded cheese all over & add your favourite toppings
11. add shredded cheese again for final topping
12. bake in preheated oven 180'C until the pizza turns golden brown, about 30min


Notes:
1. if you do not have a pizza pan, you can leave the dough on the parchment paper to bake
2. dough can be made advance and refrigerate overnight to allow the flavour to develop
3. dough flour, can use all purpose flour for softer crust or bread flour for more chew, or mix!

SIMPLE BOLOGNESE SAUCE

 Bolognese Sauce


Simple it may be,
it has not lost its Italian Identity,
as oregano is not neglected in its preparation.

This sauce freezes well.
Simply defrost, heat up and add cooked meat to serve. 

A good stock boiled with bones
will add much flavour to the sauce.

If you do not have any ready broth,
can use water and shake in some Aromat as seasoning.

If you are interested in this super easy 
Bolognese Sauce,
here is the recipe:


Easy Bolognese Sauce
1 Tbsp olive oil
1 cup stock
2 large onions, chopped fine
3 pips garlic, minced
1/2 tsp dried oregano
Salt, pepper & sugar to taste

1) heat oil in a pan
2) add onions & garlic, fry until fragrant and dry
3) add stock, oregano, tomato sauce and bring to a boil
4) season with salt, pepper and sugar 
5) reduce heat to simmer until onions are soft, about 20 min
6) dish up 


If you wish to cook the sauce with spaghetti,



Spaghetti in Bolognese Sauce
100g of minced meat
1 Tbsp olive oil
Spaghetti 
Grated cheese, if used

1) heat up olive oil in a pan
2) fry minced meat until cooked
3) add the Bolognese Sauce & simmer for awhile
4) meanwhile, cook spaghetti according to the package instructions
5) drain the spaghetti, pour Bolognese Sauce over & serve topped with grated cheese if used
