I have adapted the recipe from eileen
Crispy Chocolate Cookies
270g plain flour
30g cocoa powder
1/2 tsp baking soda
1/2 tsp salt
170g butter
110g brown sugar
60g caster sugar
1 egg
1 egg yolk
1 tsp vanilla
60g chocolate chips
1) sift flour together with baking soda, cocoa powder. Add salt & mix well
2) melt butter, remove from heat & add sugars
3) stir until sugars dissolved. Leave to cool
4) add egg to butter mixture & whisk
5) add vanilla
6) fold in flour & mix in chocolate chips
7) spoon onto lined baking sheet
8) bake in preheated oven @ 175'C for 15-20 min
9) store in air tight containers
