KUIH KETAYAP


KUIH KETAYAP




A crepe with filling of sweet coconut.
Recipe source: by Sonia aka Nasi Lemak Lover

Filling:
400 g grated coconut
2 Tbsp brown sugar
150 g palm sugar - chopped
125 ml water
2 pcs pandan leaves
4 Tbsp coarse white sugar
1/2 tsp salt
1 tsp plain flour (to bind)

Method:
1) boil together all sugars, pandan leaves and water until sugar dissolves.
2) discard pandan leaves, add in grated coconut and salt
3) cook until slightly dry and sprinkle in the plain flour, combine well
4) when it reaches the dryness, remove from heat & leave aside to cool






Crepe Batter
300 g all purpose flour
2 Tbsp tapioca flour
650 ml pandan water (juice from pandan leaves + water)
1 egg
1 Tbsp corn oil
1 Tbsp condense milk
1/2 tsp salt

Method:
1) mix 2 flours & salt and leave aside
2) mix corn oil, condense milk & pandan water together
3) add beaten egg into flour mixture, and slowly pour in the liquid
4) whisk to combine
5) sieve and leave aside for 1-2 hours

Preparation:
1) heat up a shallow pan & lightly grease the pan
2) pour one scoop of batter in the centre & swirl pan to coat the base
3) when colour of batter changes and the sides of crepe turns dry, it is ready.
4) remove and stack on each other
5) put a spoonful of filling on the crepe and roll it up like spring roll

EASY SOFT & FLUFFY SWEET ROLLS




If you are looking for an easy recipe for sweet bun, this is the right one for you.
I have adapted the recipe from Aunty Young's White Loaf Recipe.



Ingredients:
198 g milk
15 g butter
4 g salt
300 g bread flour
24 g sugar
3 g yeast

Method:
1) put all ingredients in the bread machine, bread dough cycle 1.5 Hrs
2) divide dough into 14 portions, let rest 10min
3) shape into balls & place closely together in oiled baking pan & let rise 50min
4) bake in preheated oven 190'C for 25min


If you prefer loaves,
can roll up dough & place in a loaf tin to rise until double
and
bake in preheated oven of 190'C for 25min


I have replaced
10% of the bread flour with whole grain

SWEET POTATO RAISIN ROLLS


SWEET POTATO RAISIN ROLLS



Ingredients:

200 g sweet potato ( cooked & smashed)
125 g water
30 g butter
1 tsp salt
1 large egg
30 g milk powder
125 g whole wheat flour
312 g plain flour
2 tsp dry yeast
2 Tbsp brown sugar

Optional: 100 g raisins soaked in orange juice,
               drained before adding to the dough last 2 min during kneading

Method:
1) put all ingredients in bread machine, bread dough cycle 1.5Hrs
2) divide dough and shape into balls, let rise 60min
3) bake in preheated oven of 175'C for 20min




BAGUETTE (2)

Baguette (2)


Pre-ferment Starter
250 g bread flour
165 g water
1/2 tsp dry yeast

Dough
A   250 g plain flour
      165 g water

B   1/2 tsp dry yeast
      1/2 tsp salt
      100 g pre-ferment 

Method:

1) mix all ingredients in the pre-ferment and 
     leave at room temperature for 60-90min
2) then leave in fridge for 24 hours or more before using
3) if not using, can freeze & keep for 2 weeks 
4) combine A (flour & water) and let rest 60min
5) add B to A and knead to combine
6) let rise 3 hours, turning over every hour 
7) divide into 3 balls and let rest 40min
8) fold & roll into baguette shape, then let rise 60min
9) score bread diagonally & spritz with water before sending into oven
10) bake in preheated oven of 250"c for 15min

Variation:
How about shaping them into rolls, crusty rolls?

PRECIOUS MOMENTS



Ethan : " Kung kung, let us play checkers."
Kung2: " I thought you like to play with mama?"
Ethan : " No.... she takes long time to finish one game..
              also..... she sometimes win one..."

Coming home from school,
Hayley: " I cannot eat lunch.... I have pain in my throat."
Ethan  : " You cannot say things that is not true,
                it will come to pass!"
Kung2 : " Is it pain or itchy throat?"
Hayley: " ur....... I think it is itchy."
Later, she finished the whole plate of baked rice with salmon
and commented "it is so yummy!"

At the Swensens, Ethan gave me the menu....
Ethan : " Mama, would you like to have a kid's meal?"
...thinking that he cannot finish it,
Mama: " Why not?"
Ethan: " If you order, can you please give me the apple 
              juice and the corn cup?"            
Mama: " then, what is your main course?"
Ethan: " I am sharing with Hayley, an adult portion!"

Pressing his 2 palms on my cheek,
Ethan : " Mama, your face feel like a dough."
Mama: " What do you mean?"
Ethan: " Because it is soft & sticky like the bread dough
             we knead!"

Mama: " Ethan, time to shower."
No response!
Mama: " Ethan, it is time to shower or else you will 
              not have time to nap!"
Ethan: " Then, no need la... I am big boy already."
Mama: " but mummy says you need to."
Ethan: " O........k (softly)....."
.... holding his favourite ninjago in one hand and 
crawling from the play mat... under the dining table, 
he is making his way to the bathroom!

Mama: " Don't pump the shampoo bottle so hard,
              too much shampoo for your short hair, waste 
              money and also difficult to wash off the shampoo."
Ethan: " Yes mama. My teacher says must shower 
              fast fast and don't waste water!"
... anxious to go out and play again!

Ethan: " Mama, you will wake me after at 4pm?"
Mama: " Of course, if you want me to."
then at 4pm....
Mama: "Ethan, time to wake up."
... opened his eyes, turned to the other side & continue
sleeping.
Hayley: " Mama, mummy says we can watch a TV programe
               at 4pm but Titi is sleeping how?"
Mama: " No choice, got to wait for him and watch together!"
Before we could finish our conversation, Ethan was already
standing behind us, rubbing his dreamy eyes!

Hayley: " Mama, are you going back to Ipoh tomorrow?"
Mama : " Yes, dear."
Hayley: " I will miss you mama..."
Ethan  : " I miss you too. I miss your sweet and sour fish!"
Hayley: " I miss baked rice with teriyaki chicken too!"



Mummy: " Children, go ahead and choose a bun each 
                 to eat before go to the cinema for the show."
Ethan: " I like this cheese bread stick. 
             Mama, do you like to have one like mine?
             It is very nice you know."
Hayley: " Mama, mine tastes better. 
               The cheese is inside the bun instead of outside.
               This cheese taste better."

Ninjago


 Ethan: "Mama, I draw this for you so that you cannot forget the Ninjago.
              Zane, Jay, Cole & Kai. are all good guys!
              They have very powerful weapon. Can you see the weapon?
              This big ship is called Bounty.
              The Ninja move around in it,  to fight with the bad guys!
              Sometimes, they need to ask their teacher for help if there are too many bad guys.
              The teacher is not here because he is in the temple."

MY FIRST MANGO HARVEST




The First Harvest




Our first fruits from this small plant.....




..... surviving strong in this condition, 

supported by the bamboo sticks,

and sharing 

the little opening in the cement slab with the pandan leaves bush!

See the 2 fruits at the bottom right corner?
These are kept for our children & grandchildren in Singapore.





After a few days on the counter, the mangoes are ready to be consumed
Too little to share with my mom and brothers & sisters 





I decided to bake a Mango Custard Cake instead














SPONGE CAKE



A common sponge cake 

use as base for cheese cakes, 

ice cream cakes and many more....



This recipe yields 1 sponge cake 10"

A) 115g superfine flour
       3/4 tsp bicarbonate of soda

B) 3 AA egg yolk
     45g castor sugar
     25g corn oil
     100g water

C) 175g egg white
       3/4 tsp cream of tartar
       45g sugar

Method:
1) sift A and leave aside
2) beat egg yolk & sugar
3) mix in corn oil & water
4) lastly add flour to form a condense milk consistency, leave aside
5) whisk egg white, add cream of tartar
6) continue beating, add sugar in 3 additions
7) whisk on high until stiff
8) fold in egg yolk mixture until combined
9) pour into unlined 10" baking pan
10) bake in preheated oven 160'C for 35-40min
11) overturn pan on wire rack, put a wet towel on pan to cool down
12) after 15min, remove cake from pan

MANGO CUSTARD CAKE




MANGO CUSTARD CAKE


For this cake, we need a 10" sponge cake
Recipe for sponge cake

1 sponge cake 10" - sliced 1/2 horizontally

A) 1.5 Tabsp gelatine
         3 tsp instant jelly
     100g water


B) 300g milk
       75g instant custard

C) 200g mango - shredded

D) 150g whipping cream

E) Optional topping: Pistachio Nuts - grounded

Method:
1) sprinkle gelatine & instant jelly onto 100g water
2) double boil to dissolve, keep warm
3) whisk milk & instant custard until thicken
4) add mango strips and keep aside
5) whip cream until stiff, add A, B & C
6) spread filling onto bottom layer of cake
7) cover with top layer of sponge cake
8) spread remaining filling on top & level
9) sprinkle side with topping if using
10) freeze

BREAD MACHINE SOURDOUGH BREAD


It is indeed challenging to bake a sourdough bread.  
The procedure is long and tedious 
but the end result can be quite satisfying.  

Recently my nephew Kenneth 
came with a freshly baked sourdough loaf.  
Its nutty smell 
and the sweet sour taste of the bread 
keeps linger in my mind. 
Finally I decided to try his recipe which he gladly shared...

To bake a sourdough bread we need to make the sourdough starter at least one week ahead!  

Here is the recipe for 













BREAD MACHINE SOURDOUGH BREAD


  77g sourdough starter
200g water
260g bread flour
120g stoneground wholewheat flour
2 Tbsp sugar
1.5 tsp salt
1 tsp dry yeast

Method:
1) make a sourdough starter at least one week ahead
2) weigh & use starter 8-10 hours after feeding
3) place all ingredients in bread machine
4) select BASIC. Do not use delay cycle
5) remove baked bread from pan, cool on wire rack

Note:
1) This bread is not very sour but it has the nutty flavour of the              sourdough starter
2)The amount of sourdough starter used can be adjusted to individual taste.If you add 2 Tbsp more of the sourdough, you need to reduce 1 Tbsp water & 1 Tbsp flour from the recipe.
