WHO IS BEHIND ALL THESE?





Looking out from the window of an aeroplane:  

  •   Amazed that we are flying in this endless stretch of light blue sky 
  •   Who put the sun, the moon in their places among these floating cloud? 
  •   Who cares for the birds flying in the air, way below our eyes could see?
  •   He is the Almighty God who created the Heaven and the Earth  
  •   For as high as the Heavens is above the Earth so great is His love for us  
  •   As far as the East is to the West He readily forgives our sins   




Looking out from the window of the Cruise Ship:
   
  •    Overwhelmed by the wide stretch of deep blue sea that knows no depth
  •    Who is He that calms the sea, even the wind and the storm listen to Him?  
  •    Who put the fish in the sea that we can freely feed on ?  
  •    God gives wisdom to the engineers to enable the ship to remain afloat   
  •    He is faithful and He will never leave us nor forsake us   
  •    He wants to give us His best but the choice is ours to accept   




Looking out from the Observation Deck:
   
  •    Astonished with the architecture of the gigantic skyscrapers and bridges   
  •    Nestling in front of the rolling hills, backed by the mountains far behind    
  •    Look at those colorful flower beds framed with healthy plants and bushes 
  •    Ever wonder who gives rain to these trees and the plants that surround us?
  •    People in the streets, in their cars and inside these buildings   
  •    Ever wonder who cares for these people who are forever rushing and chasing?   







Looking down from Heaven:
   
  •    I am the God, the Creator and the Engineer of the Universe  
  •    I care for the birds in the air and the fishes in the sea   
  •    No creatures in the land is left out, not even the lilies in the field   
  •    How much more I care for you whom I call to be my very own  
  •    I gave my one and only son, Jesus, just to reconcile you back to me,   
  •    To lavish on you my Love. I want to give you a life full of hope, love and joy.  
  •    I am waiting with open arms. The Heaven will rejoice if you accept me! Come.....

FOOCHOW IN SITIAWAN


I am a Foochow, A Hu-chew-noin.  My parents are both from Simpang Tiga, a small village in Sitiawan.  I was born and brought up in Ipoh.  It was in Ipoh that I met my husband.  He is also a Foochow (ku-eng) from Kampung Koh, a small town in Sitiawan.  As such, we share many fond memories of our 'home town' - Sitiawan.

Sitiawan was predominantly settled by Foochow, or 'huchiu-nen' in our dialect.  In fact, these Foochow people were led by 2 Chinese Methodist pastors, to escape the poverty in Fujian, China to come to Nanyang to look for greener pastures.  They called the place they stepped foot, 'mu-shi-lau', meaning the house of pastors (direct translation from the dialect).  It is better known as Kampung Koh. Today, there are also other dialects like hu-chiang, ku-eng, hu-kkien living in Sitiawan. Many of them speak cantonese too.

Foochow people are very hardworking, especially their women. These Foochow women are thrifty too. This is why the Foochow girls are well sort after for marriage!  Their parents will normally get a higher dowry compared to other dialects!  In return, the bride's parents (think they have more to lose) will put a few rubber trees (signifies the number of  'bar' or estates they give to their daughter) through the windows of the bridal car.  In olden days Sitiawan,  brides were seen with necks and wrists weighed down with chains of gold, not to mentioned the 10 fingers almost full of gold rings from parents and relatives!  Foochow relatives are really generous.

Most of the people in Sitiawan were rubber tappers during the olden days.  They woke up before dawn, some even after mid-night if they were slow workers, to tap the rubber trees.  This was so because they need to finish the job before sunrise.  As it was still dark, they wore a torch-light on the forehead. After lunch, they would normally rest by lying on the cement floors at home.  

Afternoons were the time to gather for celebration if there was any.  As such most of the wedding feasts were held in the afternoons.  Since it was a celebration feast,  the whole family,  young or old would go. The whole family would normally take up a table each.  Be it 12 or 15 persons, they could easily squeeze in because they sat on benches rather than chairs! They would even bring their pots or carrier knowing that there would surely be more than enough on the table!   The host would usually serve 16 to 18 dishes on the table!  So a wedding feast is meant to be shared on the table at the host's house in the afternoon, and a left over dinner at individual homes!  Do you now believe that Foochow are generous people? One thing for sure, these feasts were usually homecooked.  Voluntary helpers would swarm in from all over the village to render help!

Do not be alarmed if you see 2 Foochow standing facing each other and talking loudly.  'Huchiu-nen' usually speaks  'huchiu-wa' or Foochow dialect loudly no matter where, be it in the wet market or airconditioned supermarket!  Once I asked why they need to speak so loudly when the other person is just in front of them.  Guess what is the reply?  " It shows our warmth, and closeness towards each other."  The older generation like my mother takes pride in 'gong-bang-wa' or even sing their 'huchiu-kwo' like the following:  Sung in Foochow:


"Ni Tau Lor Lan, Loh San Kian
Hai Tsui Zhu Chai, Ng Nai Sian
Hor Soak Moi Doh, Ng Nai Tsui
Hor Gian Toh Yin, Ng Nai Chian"

曰頭落山,落山邊
海水煮菜,吳乃盬
好石磨刀,吳乃水
好仔討㛺、 吳乃錢


Direct Translation:

The sun goes down by the side of the mountain
Use sea water to fry vegetable, don't need salt
Use good stone to sharpen knife, don't need water
So, when a good son gets married, don't need money

Many young Foochow left Sitiawan to look for better job opportunities elsewhere.  A few of them even stammer at their once fluent dialect!  Luckily, food still remains as the link between the young and old generation of Foochow people despite the distance that separate them.
  
Mother's Foochow cooking is still the best! Dishes like oinchiu -mian-sian (red wine chicken mian), char-chu-mian (braised noodle), kan-puan (dry blend noodle in black sauce), char-nyupian (sweet and sour fish), lan-baykuk (soft stewed pork ribs with sechuan spicy veg.), kor-lou (spicy, sweet and sour fish maw soup), yen-gwong (meat balls wrap in pork sheets), huchiu-yu-won' (foochow fish ball with pork filling), oinchau-kay (fried chicken in red wine residue), nyu-tau-loon (sour fish head soup), dea-lonn (fluffy oyster egg). 

Not forgetting those pottery baked biscuits  like gong-pian, jing nung piang and hu-chiang miang. These are either sweet or savoury, hard or soft ones according to how they are called.  Others like ching aik koh (groundnut bun), chen-nau-pau (pillow buns with groundnut filling), wha-leng-tong (sweet groundnut soup), tau-sar-pian(biscuits with green pea filling), nuk-pau (pork buns), dea-pian(fried oyster biscuits), hui-bar (twisted torch biscuits). 

Special Foochow food eaten during celebrations and festivals, just to name some, tai-ping lonn (pouch egg soup for peace), tai-ping mian (noodle that signifies peace and reunion), pei-kuo-poon (steamed pulut rice with 8 jewels), pu-lik-kay (black herbal soup boiled with white feather duck), lu-ark (braised duck), char-pei-kuk (sweet and sour pork rib), chun-pian (savoury crepe), ah-wu-chiok (sweet glutinous rice porridge to be boiled for elders on the 29th day of the 1st lunar month- an act of filial piety)

KUIH KETAYAP


KUIH KETAYAP




A crepe with filling of sweet coconut.
Recipe source: by Sonia aka Nasi Lemak Lover

Filling:
400 g grated coconut
2 Tbsp brown sugar
150 g palm sugar - chopped
125 ml water
2 pcs pandan leaves
4 Tbsp coarse white sugar
1/2 tsp salt
1 tsp plain flour (to bind)

Method:
1) boil together all sugars, pandan leaves and water until sugar dissolves.
2) discard pandan leaves, add in grated coconut and salt
3) cook until slightly dry and sprinkle in the plain flour, combine well
4) when it reaches the dryness, remove from heat & leave aside to cool






Crepe Batter
300 g all purpose flour
2 Tbsp tapioca flour
650 ml pandan water (juice from pandan leaves + water)
1 egg
1 Tbsp corn oil
1 Tbsp condense milk
1/2 tsp salt

Method:
1) mix 2 flours & salt and leave aside
2) mix corn oil, condense milk & pandan water together
3) add beaten egg into flour mixture, and slowly pour in the liquid
4) whisk to combine
5) sieve and leave aside for 1-2 hours

Preparation:
1) heat up a shallow pan & lightly grease the pan
2) pour one scoop of batter in the centre & swirl pan to coat the base
3) when colour of batter changes and the sides of crepe turns dry, it is ready.
4) remove and stack on each other
5) put a spoonful of filling on the crepe and roll it up like spring roll

EASY SOFT & FLUFFY SWEET ROLLS




If you are looking for an easy recipe for sweet bun, this is the right one for you.
I have adapted the recipe from Aunty Young's White Loaf Recipe.



Ingredients:
198 g milk
15 g butter
4 g salt
300 g bread flour
24 g sugar
3 g yeast

Method:
1) put all ingredients in the bread machine, bread dough cycle 1.5 Hrs
2) divide dough into 14 portions, let rest 10min
3) shape into balls & place closely together in oiled baking pan & let rise 50min
4) bake in preheated oven 190'C for 25min


If you prefer loaves,
can roll up dough & place in a loaf tin to rise until double
and
bake in preheated oven of 190'C for 25min


I have replaced
10% of the bread flour with whole grain

SWEET POTATO RAISIN ROLLS


SWEET POTATO RAISIN ROLLS



Ingredients:

200 g sweet potato ( cooked & smashed)
125 g water
30 g butter
1 tsp salt
1 large egg
30 g milk powder
125 g whole wheat flour
312 g plain flour
2 tsp dry yeast
2 Tbsp brown sugar

Optional: 100 g raisins soaked in orange juice,
               drained before adding to the dough last 2 min during kneading

Method:
1) put all ingredients in bread machine, bread dough cycle 1.5Hrs
2) divide dough and shape into balls, let rise 60min
3) bake in preheated oven of 175'C for 20min




BAGUETTE (2)

Baguette (2)


Pre-ferment Starter
250 g bread flour
165 g water
1/2 tsp dry yeast

Dough
A   250 g plain flour
      165 g water

B   1/2 tsp dry yeast
      1/2 tsp salt
      100 g pre-ferment 

Method:

1) mix all ingredients in the pre-ferment and 
     leave at room temperature for 60-90min
2) then leave in fridge for 24 hours or more before using
3) if not using, can freeze & keep for 2 weeks 
4) combine A (flour & water) and let rest 60min
5) add B to A and knead to combine
6) let rise 3 hours, turning over every hour 
7) divide into 3 balls and let rest 40min
8) fold & roll into baguette shape, then let rise 60min
9) score bread diagonally & spritz with water before sending into oven
10) bake in preheated oven of 250"c for 15min

Variation:
How about shaping them into rolls, crusty rolls?

PRECIOUS MOMENTS



Ethan : " Kung kung, let us play checkers."
Kung2: " I thought you like to play with mama?"
Ethan : " No.... she takes long time to finish one game..
              also..... she sometimes win one..."

Coming home from school,
Hayley: " I cannot eat lunch.... I have pain in my throat."
Ethan  : " You cannot say things that is not true,
                it will come to pass!"
Kung2 : " Is it pain or itchy throat?"
Hayley: " ur....... I think it is itchy."
Later, she finished the whole plate of baked rice with salmon
and commented "it is so yummy!"

At the Swensens, Ethan gave me the menu....
Ethan : " Mama, would you like to have a kid's meal?"
...thinking that he cannot finish it,
Mama: " Why not?"
Ethan: " If you order, can you please give me the apple 
              juice and the corn cup?"            
Mama: " then, what is your main course?"
Ethan: " I am sharing with Hayley, an adult portion!"

Pressing his 2 palms on my cheek,
Ethan : " Mama, your face feel like a dough."
Mama: " What do you mean?"
Ethan: " Because it is soft & sticky like the bread dough
             we knead!"

Mama: " Ethan, time to shower."
No response!
Mama: " Ethan, it is time to shower or else you will 
              not have time to nap!"
Ethan: " Then, no need la... I am big boy already."
Mama: " but mummy says you need to."
Ethan: " O........k (softly)....."
.... holding his favourite ninjago in one hand and 
crawling from the play mat... under the dining table, 
he is making his way to the bathroom!

Mama: " Don't pump the shampoo bottle so hard,
              too much shampoo for your short hair, waste 
              money and also difficult to wash off the shampoo."
Ethan: " Yes mama. My teacher says must shower 
              fast fast and don't waste water!"
... anxious to go out and play again!

Ethan: " Mama, you will wake me after at 4pm?"
Mama: " Of course, if you want me to."
then at 4pm....
Mama: "Ethan, time to wake up."
... opened his eyes, turned to the other side & continue
sleeping.
Hayley: " Mama, mummy says we can watch a TV programe
               at 4pm but Titi is sleeping how?"
Mama: " No choice, got to wait for him and watch together!"
Before we could finish our conversation, Ethan was already
standing behind us, rubbing his dreamy eyes!

Hayley: " Mama, are you going back to Ipoh tomorrow?"
Mama : " Yes, dear."
Hayley: " I will miss you mama..."
Ethan  : " I miss you too. I miss your sweet and sour fish!"
Hayley: " I miss baked rice with teriyaki chicken too!"



Mummy: " Children, go ahead and choose a bun each 
                 to eat before go to the cinema for the show."
Ethan: " I like this cheese bread stick. 
             Mama, do you like to have one like mine?
             It is very nice you know."
Hayley: " Mama, mine tastes better. 
               The cheese is inside the bun instead of outside.
               This cheese taste better."

Ninjago


 Ethan: "Mama, I draw this for you so that you cannot forget the Ninjago.
              Zane, Jay, Cole & Kai. are all good guys!
              They have very powerful weapon. Can you see the weapon?
              This big ship is called Bounty.
              The Ninja move around in it,  to fight with the bad guys!
              Sometimes, they need to ask their teacher for help if there are too many bad guys.
              The teacher is not here because he is in the temple."

MY FIRST MANGO HARVEST




The First Harvest




Our first fruits from this small plant.....




..... surviving strong in this condition, 

supported by the bamboo sticks,

and sharing 

the little opening in the cement slab with the pandan leaves bush!

These are kept for our children & grandchildren in Singapore.





After a few days on the counter, the mangoes are ready to be consumed
Too little to share with my mom and brothers & sisters 





I decided to bake a Mango Custard Cake instead














SPONGE CAKE



A common sponge cake 

use as base for cheese cakes, 

ice cream cakes and many more....



This recipe yields 1 sponge cake 10"

A) 115g superfine flour
       3/4 tsp bicarbonate of soda

B) 3 AA egg yolk
     45g castor sugar
     25g corn oil
     100g water

C) 175g egg white
       3/4 tsp cream of tartar
       45g sugar

Method:
1) sift A and leave aside
2) beat egg yolk & sugar
3) mix in corn oil & water
4) lastly add flour to form a condense milk consistency, leave aside
5) whisk egg white, add cream of tartar
6) continue beating, add sugar in 3 additions
7) whisk on high until stiff
8) fold in egg yolk mixture until combined
9) pour into unlined 10" baking pan
10) bake in preheated oven 160'C for 35-40min
11) overturn pan on wire rack, put a wet towel on pan to cool down
12) after 15min, remove cake from pan
