HONG ZHAO LU DAN




紅糟滷蛋
HONG ZHAO LU DAN

After extracting the red rice wine, 
I usually keep the Ang Chow 紅糟 in bottles
to be used for cooking chicken, pork or mee sua.

I was attracted to Chef Fiona Lau's sharing 2 days ago, "Hong Zhao Lu Dan"
The colour was so bright and red!
So beautiful and appropriate for the coming CNY Celebration!

I have used less Ang Chow
so the colour not as bright as hers.
Nevertheless, the taste is good.
I have to agree with Fiona Lau that it is highly addictive, cannot stop eating ....

Here is her recipe if you are interested:

Hing Zhao Lu Dan
20 small eggs, hard boiled & de-shelled
160-200g red rice wine residue
700g broth (chicken or vegetable)
1 Tbsp dark soya sauce (to make colour more vibrant)
2 tsp salt
3 Tbsp sugar
40g old ginger, sliced
3 Tbsp sesame oil

1. in Medium to low fire, fry ginger slices in sesame oil until fragrant
2. add red residue and fry 2-3min, taking care not to burn it (it will be bitter if burnt!)
3. add broth, salt, soya sauce and sugar
4. add boiled eggs and bring to a boil, turn to low heat and cook for 10min
5. turn off heat and soak eggs for 2-3 hours or overnight before serving

CRUSTY ROLLS


Crusty Rolls
adapted from King Arthur's Crusty European-Style Hard Rolls

I love beautiful golden-brown rolls,
richly flavoured,
perfectly shaped,
and of course wonderfully crusty!

These crusty rolls are made from basic ingredients like flour, water, yeast and salt.

Softening agents
 like a tsp of sugar, or a Tablespoon of milk powder may be added
to keep the loaf's interior tender,
but will not affect the crispness of the crust.

These rolls are light and airy
with a delicious crackly crust once out of the oven.
Simply reheat to restore the crispness.

I love these crusty rolls!

Long hours of proofing and also in the refrigerator
enhances the flavour

Cooling the rolls in the oven 
helps to evaporate moisture from the surface as the bread cools down,
leaving the crust crisp!


Starter
113g water
120g King Arthur Unbleached All-purpose flour
1/8 tsp instant yeast

Dough
all of the starter
420g King Arthur Unbleached All-purpose flour
         (I replace 100g with milled white quinoa)
227g water
1.5 tsp salt
1/4 tsp instant yeast

Egg Wash
1 large egg white mixed with 1-2 Tbsp water

Method:
1. To make starter:
mix all ingredients until smooth, cover, and let rest at room temperature overnight
2. To make main dough:
combine all ingredients including starter in bread machine, bread dough cycle,
allow the dough to rise for 3 hours. Turn the dough over after every hour.
3. divide dough into 16 pieces, shape into balls, and firm up.
4. place rolls on parchment lined baking tray to rise for 1-2 hours until puffy.
5. cover rolls, and refrigerate 2-3 hours.
6. towards the end of refrigeration time, preheat oven to 225'C,
 place a small bowl of boiling water at the bottom of the oven to create steam.
7. egg wash rolls. slash the rolls before sending them into the oven
8. bake rolls for 20-25min until they are deep golden brown.
9. switch off oven, and open the door few inches to allow bread to cool in the oven.

FRIED QUINOA


Quinoa
has been named a 'Superfood'
because of its high nutrient value.
It is basically a seed either red, black or white in colour.

Research shows that there are more benefits
than your fingers can count.

The method of preparation
 is similar to grain, either cook it or grind into powder for baking.

Some may not like it because it has a bitter taste.

In baking, we use it as grain flour,

Cook the Quinoa
and
Fry as if you fry rice, haha!

APPLE CAKE

Apple Cake


There are times when we just crave for a slice of
fragrant, spongy and juicy apple cake.

It is so refreshing.
You can never get tired of it.

It is easy to make too.
Just normal creaming method with pieces of apples added!
The aroma of baked apples & cinnamon fills the kitchen as you bake this cake.
I could not wait for the cake to cool completely before cutting it!
Simply irresistible!

Apple Cake
2 apples, peeled, cored & cut into 1/2" cubes
120g superfine flour
1 tsp baking powder
1/2 tsp cinnamon powder (or less if you prefer)
1/4 tsp salt
113g butter
135g sugar
2 large eggs
1 tsp vanilla extract

Optional: 
1 Tbsp granulated sugar to sprinkle on the cake before sending into oven

1. whisk together the flour, baking powder, cinnamon powder & salt, set aside
2. cream butter & sugar until light & fluffy
3. add eggs, one at a time, beating well after each addition
4. beat in vanilla and apples pieces
5. using a spatula, fold in the dry ingredients. Do not overmix!
6. scrape the batter into a 9" parchment lined pan, even the top.
7. bake in preheated oven, 175'C for 40min, until the cake is golden
    and tooth pick inserted comes out clean.

THE ULTIMATE CHOCOLATE BROWNIE

Death by Chocolate Brownie.

It is her best chocolate brownie 
that her friends and family never get tired of.

She said, "Look! The chocolate is oozing from the inside.....
isn't it perfect? ...."

My Ultimate Chocolate Brownie

Perhaps you may like to try making one, and here is her recipe:

The Ultimate Chocolate Brownie
240g butter, melted
30g vegetable oil
260g white sugar (I reduced to 200)
200g light brown sugar
4 large eggs, at room temperature
1/4 tsp salt
1 Tbsp vanilla extract
130g all purpose flour
100g good ccocoa powder
200g roughly chopped chocolate or large chocolate button

1. preheat oven 175'C
2. line a 8x12" square pan with parchment paper
3. whisk together melted butter, oil and sugars
4. add vanilla and eggs, one at a time; beat until lighter in colour
5. gently fold in sifted (flour, cocoa powder and salt) Do not over beat!
6. fold in 3/4 of the chocolate pieces (leave 1/4 for topping)
7. pour batter into prepared pan, smooth the top evenly
8. scatter the remaining chocolate pieces on top of the cake
9. bake for 30min until the centre no longer jiggles and is set to the touch
10. allow to cool in pan for 10min before removing to cool on rack

Optional:
If you like some crunch or additional flavour, add some crushed walnuts, peanuts,
almonds, pecans or some dried fruits like cranberries, raisins etc.

Shelf life
1. store at room temperature for 3 days
2. if refrigerated, up to 5 days
3. if frozen, up to 3 months

To serve, either
1. bring to room temperature or
2. reheat lightly in toaster oven

SOFT SPELT ROLLS


SOFT SPELT ROLLS

Spelt Flour 
is a popular cereal grain flour.
It is a good source of dietary fibre.
As such, it is often added to breads and pastas for health reasons.

Soft Spelt Rolls
300ml fresh milk
1 egg
400g bread flour
100g spelt flour
1 tsp instant yeast
50g sugar
1 tsp salt
30g butter

1. all ingredients into the bread machine, bread dough cycle 1.5Hrs
2. divide dough into 40-60g each
3. shape into balls and place on parchment lined baking tray
4. rest for 30-60min until almost double in size
5. bake in preheated oven @190'C for 15min

HEAL THE SICK

Isaiah 53: 4&5
"Surely He has borne our griefs and carried our sorrows; yet we esteem Him stricken, smitten by God, and afflicted. But He was wounded for our transgressions. He was bruised for our iniquities; the chastisement for our peace was upon Him, and by His stripes we are healed."

Yes, Jesus died for you and me. There is forgiveness and healing for ALL who will accept by faith. Build your faith upon the Word of God. Jesus said in Luke 17:6 that "if you have faith as small as a mustard seed, you can say to this mulberry tree,'be uprooted and planted in the sea,' and it will obey you."

Healing is not the special privilege of a favoured few; it is a redemptive right of ALL who believe.  So, if you believe, call upon the name of our Lord Jesus Christ, and claim your healing:



Let us pray in faith:

Lord God Almighty, you are the only true and living God. You are great! You are Mighty! We want to praise you and honour you for all that you have done for us, and are still doing for us.  You are worthy of all praise and worship.

Jesus Christ "took our infirmities and bore our sicknesses" (Matthew 8:17) His death on the cross provides an atonement for our sins and healing for the whole man - spirit, soul and body.

It is God's will to heal ALL. Jesus said, "Ask, and it will be given you... for everyone asks receives."(Matthew 7:7 &8) Amen. Praise God. This is your Word. We want to build our trust in your word.

Father God, our body is the temple of God. Sickness and pain has no place in our body! We cast it out in the name of Jesus! We reject it in the Mighty name of Jesus! We will not allow it back, amen.

Thank you Lord that you always hear our prayers, and healing is on its way. In Jesus blessed name we give thanks, amen.
