PEPPER CORN SOUP



Pig's Stomach
in
Pepper Corn Soup
is
a hot soup that can sweat you out 
if you have not sweat for a long time

This is a very good soup for ladies during confinement 
as it expels 'wind' from the body

The difficult part of preparing this soup
is none other than cleaning the pig's stomach

I have an easier method to share with you at the end of this post
so just be patient and read until the end 

Pepper Corn Soup
1/4 - 1/2 pig's stomach, cleaned & cut into bite size
1/2 tsp pepper corn, lightly cracked
1/2" old ginger, smashed lightly
3 dried scallops
1 chicken thigh, cut into bite size
1 pair chicken legs, optional
2-3 bowls of water
salt to taste, if necessary

1. double boil all ingredients except chicken thigh for 1 hour
2. add chicken pieces and continue cooking for another 1-2 hours 
3. when pig's stomach is tender, serve hot

To clean the Pig's stomach:
1. snip off all fats from the surface of the pig's stomach
2. turn the stomach inside out, wash away the slime under slow running water
3. use a knife to scrap off the remaining sticky substance
4. drain, add 2-3 Tbsp salt & scrub as you would scrub your kitchen towel with your hands
5. add 2-3 Tbsp tapioca starch or corn starch, continue rubbing & scrubbing
6. rinse off the sticky substance & repeat 4 & 5
7. rinse & put into boiling water, cover & turn off heat. Leave aside for 15min
8. can leave to cool or just add tap water to cool down
9. use a knife to scrape off any loose white skin
10. the pig's stomach is now ready for cooking.
