Pickled Vegetable

also called Chinese Vegetable Salad
will complement deep fried dishes
or spicy ones

It is so refreshing
to have a big tub
of this sweet and sour vegetables
among a long spread of buffet

It is easy to make
and can make in advance
even a day before!

1/2 pineapple, cut into pieces
1 cucumber, seeds removed & sliced
1/2 carrot, shredded into strips
2 big onions, cut
1 red chilli, sliced

1/2 tsp salt
3 Tbsp vinegar 
4-5 Tbsp sugar

1) marinate cucumber with salt & leave aside for 1/2 an hour
2) wash off the salt & squeeze dry
3) combine pineapple, cucumber, carrot, onions & chilli in a mixing bowl
4) add vinegar & sugar, mix well
5) leave in the fridge & serve cold

Amount of vinegar & sugar used depend on own liking.
